just plain crack and open an egg? I don't recall ever having a problem with damaging the yolk in doing that. So: very reliably.

Always! Except occasionally when I'm trying to do a lemon merinue pie in a hurry and only have three eggs. I blame Murphy's law.

I was cracking eggs for omelets this afternoon and my mom said "I don't like those eggs, the yolks break too easily, and they're not yellow enough", so it may be an issue with the kinds of eggs you buy! I was doing okay cracking them, but a one or two broke. 75 percent average? I dunno, I don't keep track.

I don't know, it could be 50 percent for me, as I said, I don't keep track. How are you breaking them, though? Cracking them against the rim of a bowl, or against a flat surface? (the latter is the method a lot of chefs on TV say to use)

It's always been a bowl... I've never heard of trying a flat surface. I'm learning things!

Video example! The general idea is to prevent egg shards, but it's arguable that breaking eggs on a bowl rim sends shards upwards, thus breaking the yolk, so that might make a difference.

THIS EGG METAGAME IS AMAZING.

All I make are omelets, anyway, so this doesn't really apply to me that much. Not many pieces of shell make it into my glass measuring cup, either. Maybe I hold a secret to this process?!

I have a 95% success rate with this. The fail rate usually comes when I want to make meringue and then I have to make scrambled eggs with it to feel better about breaking the damn yolks so many times.

Generally I can, but I don't cook with eggs too often these days. Whenever I get eggs, I make about two, and then the other four just sit in the fridge until it's time to throw them out! And I got tired of that, so I stopped buying them.

About 99.999% It has never happened, but I am aware of the possibility of it happening so in good conscience I cannot say 100%.

I don't think I've ever broken a yolk. Or gotten shell mixed in. I've been told that you're supposed to always crack them into a cup before putting it in whatever, so that you can dig the shell bits out... but I've seriously never had either of these problems, I just rap them on the side of whatever they're going into, and crack them open.

The only time I've broken a yolk is when I spectacularly fail at cracking the egg in the first place... like the shell comes off but the thin skin layer is there, keeping it all inside, so I have to press again and... well you see.
